Eggnog Quick Bread

Ahhhh… the holiday season. A time of joy, laughter, family traditions and delicious holiday food. And don’t start thinking I forgot about the drinks! One of my favorite drinks around this time of year is…. you guessed it – eggnog! The sweet creamy elixir calls my name all through the holiday season and is almost irresistible. 
One of my favorite parts of my job has been working directly with the farm families who create the milk that goes into making eggnog. These farm families often have delicious recipes that have been passed down for years during the holiday seasons to make Christmas an incredibly special time. 
As I was chatting with one of our dairy farmers about Christmas traditions in her family and what kicks off the season in her home, she mentioned a quick bread recipe that she got from her mother. It continues to be a staple in her house during Christmas. The part that caught my attention – it was an eggnog quick bread…

With my love for eggnog in the back of my mind, I knew I had to try it. She kindly gave me the recipe and what transpired can only be described as Christmas magic. 
This bread is fantastic! Even if you aren’t a huge fan of eggnog (I mean, is that really a thing, though?) it has a mild eggnog flavor without losing any of the taste.

The recipe is super simple. You start by blending together the eggs, sugar, eggnog, melted butter, rum flavoring and vanilla extract on low until it is well combined.

Next up, add the dry ingredients – flour, baking powder, nutmeg, and salt. Blend away until it is mixed well.

Transfer the batter to a buttered bread pan and bake at 350° for 60 min or until a toothpick inserted into the middle of the loaf comes out clean. After the bread finishes baking, take it out to let it cool. While it is cooling, go ahead and whip up some glaze to go on top. All you need is melted butter, powdered sugar, vanilla and a little milk. By hand, mix the first three ingredients together. Add a splash of milk to get the desired consistency. If the mixture gets too thin, add more powdered sugar to thicken it up. Top the bread with the glaze and voila! Delicious Eggnog Quick Bread.

The hardest part about making this is waiting for the bread to cool down enough to glaze and eat it! But the wait is well worth it.

2 eggs
1 cup granulated sugar
1 cup eggnog
½ cup butter, melted
2 tsp. Rum flavoring/extract
1 tsp. Vanilla extract
¼ cup flour 
2 tsp. Baking Powder
½ tsp. Salt
¼ tsp. Nutmeg
2 tbs. butter, melted
¼ tsp. vanilla extract
1/3 cup powdered sugar
Milk (as needed)
Combine eggs, sugar, eggnog, butter, rum extract/flavor, and vanilla extract in a bowl. Mix on low with an electric mixer until well combined. Add flour, baking powder, salt, and nutmeg, mix thoroughly. Transfer batter to a buttered bread pan. Bake at 350° for 60 min or until the edges are golden brown and toothpick inserted into the middle of the loaf comes out clean. 
By hand, mix butter, vanilla, and powdered sugar together in a small bowl. Add in small amounts of milk until the mixture is a thin drizzle but not water consistency. If mixture is too thin, add more powdered sugar to thicken.
